Please forgive me for what I am about to say but… I am not the biggest fan of pumpkin spice lattes. Initially, when Starbucks first released this cult coffee, I bought into the hype and jumped right on that Autumnal bandwagon. However, to be completely honest I really don’t think they are worth the crazy hype and find them to be a little too sweet. So, with this being said, this year I thought I would try my hand at making my very own pumpkin spice inspired winter drink – one that is a little more on the healthy side.
Disclaimer: this heavenly hug in mug drink doesn’t actually contain a single trace of pumpkin but who are we kidding – neither does the original. However, it does taste pretty damn delicious if I do say so myself. Ohh and unlike the infamous original, it can also be vegan friendly if made with dairy free milk, woo! This little drink is the perfect winter warmer for those cold and crisp autumn mornings and nights. It is also super easy to whip up! So without further adiue, let’s get cracking.
For this recipe you will need:
- A cute mug.
- Chai Teabags – I use the Tea India variety.
- Vanilla Syrup / essence
- Instant coffee / espresso if available
- Boiling water
- Milk (dairy or non dairy)
- Cinnamon Spice
- Cream – optional.
Step 1 – The Syrup
Personally, I often find that the syrups used in coffee shops – especially the pumpkin spice variety can be wayy to sickly. Therefore, I like to recreate my own syrup using slightly healthier ingredients. To make the “syrup” for this drink, place your heavenly scented chai teabag in your mug. Boil your kettle and pour in 15ml of water and leave to steep for around four minutes. Whilst this steeps add in a drop of vanilla essence and half a teaspoon of cinnamon then stir and voila – you now have a low sugar, natural “syrup”.
Step 2 – The Coffee (optional).
Personally, I have my my own little coffee machine at home that I like to use for pouring espresso shots. However, I am aware that not everyone may have access to such a machine. Not to fret though, to replicate this espresso, simply take two teaspoons of instant coffee and add around 10ml of boiling water to create a concentrated espresso-esque shot.
Step 3 – The Finale
Once you have both your homemade syrup and coffee shot at the ready, add them together and mix. By now, this should smell like an autumnal dream. Next up, heat around a cupful of the milk of choice in your microwave or pan and stir into your mixture.
Step 4 – The Toppings – To finish, add a sprinkle of cinnamon and some whipped cream (totally optional).
